It's been a joy and truly a labor of love piecing our raised bed garden together. We learnt a lot from our last/first attempt at gardening and this time we were better planned.

The Best Pizza Dough

We got a bit tired of our whole wheat pizza dough I think we got too accustomed to it and decided it needed some tweaking.

US Road trips

We've made a few road trips around the US. There's a lot to see here and a lot of distance to cover. Here are some of our trips on the east coast.


Panama's carnival celebration in Panama City are supposed to be the second largest in the world. Enjoyed this big party with fantastic street food, dozens of stages and loud music blaring at every corner.


Canada has some of the most beautiful sceneries and landscapes. I hope to drive across to the West coast some day but till then here's a glimpse of Toronto and beyond.

Ottawa Winterlude Festival | Ice Sculptures

Distance: 1006 Km.

Length: 3 days.

We couldn't have picked a colder weekend to head up to Ottawa. Friday late afternoon I checked the weather to learn there was a powerful low pressure system arriving into Ontario that day bringing some heavy snow, very strong winds and frigid temperatures. This ought to be interesting I thought...

Driving conditions started to deteriorate to very low visibility as we passed Pickering. At some points you could barely recognize the road and at times I'd hit the lane borders.

After an hour the excitement started to wear off. And luckily so did the snow storm. We were able to pick up speed and reach Kingston in time for dinner.

We decided on the Rose and Crown which was the only restaurant open that late. Their Fish and Chips was half decent but their Guinness was good!

We were back on the road headed for our Hotel which was a few minutes away. I'm told Kingston is a charming town. I don't quite know why.

Next morning we set out from Kingston towards Ottawa. The sun was shining despite being -12 degrees. It was a lovely day for pictures.

There wasn't much to see along the drive besides endless snow fields and Timmys :) 

By noon we reached down town Ottawa and to our Hotel. It was only when we got out of the car that we realized just how cold it was!  -16 !!!!

We were blown out of our minds when our concierge came out of the hotel in a t-shirt to guide us with the parking.

I have never been out at -16 below. Nor was I properly dressed for such cold. But then again I'm not the best prepared traveller.

I dressed in as many layers as possible and hit the road on foot to discover the lovely city centre of Ottawa. There was a lot to see. Some of the highlights were the beautiful ice sculptures on display at the Winterlude Festival, The famous Rideau Canal which becomes the longest ice skating rink, the beautiful Parliament Hill, National Gallery of Canada, the peace tower, the Cathedral-Basilica of Notre Dame, Chateau Laurier,  and the fantastic brunch at ByWard Market.

Healthy Whole Grain Pizza Dough Recipe

After several attempts at different recipes, I have found my favorite! A healthy whole grain option for Pizza dough. This dough recipe works with a bread-maker too. Just follow the same steps and let the bread machine do the hard work.
Healthy Whole Grain Pizza Dough Recipe

  • 1 teaspoon white sugar;
  • 1 1/2 cups warm water (45 ° C);
  • 1 tablespoon dry yeast;
  • 1 tablespoon olive oil;
  • 1 teaspoon salt;
  • 2 cups whole wheat flour;
  • 1 1/2 cups flour.

  • In a large bowl with hot water, melt the sugar. Stir in yeast and let it stand for about 10 minutes until foam is formed.
  • Stir in olive oil, salt, whole wheat flour and 1 cup flour. Knead until dough is smooth, about 10 minutes. Brush on dough surface with oil, cover and let stand for 1 hour in a warm place until it doubles its volume.
  • After allowing to stand, either divide the dough into 2 pieces for 2 pizzas with a thin base, or leave whole for a rough body. Knead well again and then let it rise for about 45 minutes.
  • Preheat the oven to 220 ° C.  Make your pizza shape and place on a baking sheet pizza. 
  • Toppings in the order listed are tomato sauce/Salsa sauce, cheese, sun dried tomatoes, ham, gypsy salami, onions, olives, artichokes and pineapple and mushrooms.
  • Bake 16-20 minutes (depending on thickness) in the preheated oven, until crust is crisp and golden at edges and that cheese has nicely melted.
