It's been a joy and truly a labor of love piecing our raised bed garden together. We learnt a lot from our last/first attempt at gardening and this time we were better planned.

The Best Pizza Dough

We got a bit tired of our whole wheat pizza dough I think we got too accustomed to it and decided it needed some tweaking.

US Road trips

We've made a few road trips around the US. There's a lot to see here and a lot of distance to cover. Here are some of our trips on the east coast.

Panama

Panama's carnival celebration in Panama City are supposed to be the second largest in the world. Enjoyed this big party with fantastic street food, dozens of stages and loud music blaring at every corner.

Canada

Canada has some of the most beautiful sceneries and landscapes. I hope to drive across to the West coast some day but till then here's a glimpse of Toronto and beyond.

Kadai Paneer (Karahi Paneer)

Kadai Paneer is a simple mild flavorful paneer dish with bell peppers/capsicum. Traditionally it's cooked in a Kadai but you can get around this by grilling the paneer and vegetables separately.
Karahi Paneer


Ingredients:-
  • 1 1/2 cup paneer, 500 gr;
  • 3 bell peppers;
  • 1 large onion;
  • 1 tsp chilli powder;
  • 1 teaspoon salt;
  • 1 tablespoon olive oil;
  • 1/2 cup 18% cream;

For the sauce:-
  • 6 cloves of garlic;
  • 1 green chilli;
  • 1 tablespoon ground coriander;
  • 1/2 teaspoon ground cumin;
  • 1/2 teaspoon turmeric;
  • 1 tsp chilli powder;
  • 1 teaspoon of fenugreek leaves;
  • 1 teaspoon garam masala;
  • 2 1/2 cup chopped tomatoes;
  • 1/4 cup tomato puree;
  • 2 tablespoons hot water.

Procedure:-
  • Cut the paneer cheese into cubes. Slice the peppers and onions into cubes. 
  • Place in a baking tray, season with salt, a sprinkle with chilli and brush lightly with olive oil. 
  • Grill in the oven for 5 minutes, then turn the contents over and grill another 5 minutes.
  • Fry finely chopped garlic in oil for 30 seconds. 
  • Add in green chilies and fry for another 30 seconds. 
  • Add in the mixed spices and stir for 20 seconds then add tomatoes, tomato puree and hot water and let it simmer for 10 minutes. 
  • Add to this sauce the grilled paneer with peppers and onions. 
  • Drizzle with cream and simmer for a few minutes. 
  • Serve with garlic naan.

Dahl Recipe - Lentil Daal recipe

The secret to making tasty Dahl is mixing different varieties of lentils. This recipe is with Moong, Toor and red lentils.

Ingredients:-

  • 1/3 cup lentils Moong Dal;
  • 1/3 cup lentils Toor Dal;
  • 1/3 cup red lentils;
  • turmeric;
  • 5 cloves of garlic;
  • caraway seeds and mustard;
  • 2 chilies;
  • curry leaves;
  • 3 tablespoons chopped tomatoes;
  • coriander leaves;
  • salt.

Preparation:-
  • Soak the lentils for 1 hour. Transfer it to the pressure cooker along with turmeric and salt and cook up a pot 3x blows his whistle. Remove from, let stand for a minute and stir well.
  • Oil to fry the garlic, cumin and mustard seeds, finely chopped chillies and curry leaves.
  • Add sliced ​​tomatoes and sliced ​​into small pieces coriander. Serve with rice.

Whole Wheat Bread

Ingredients:-
  • 3 1/2 cup whole.wheat flour;
  • 1 cup warm water;
  • 1 heap tablespoon dry yeast;
  • 2 tablespoons sugar;
  • 2 teaspoons salt;
  • 1 egg;
  • 50 ml olive oil.

Preparation:-
  • Knead all the ingredients together and leave to rise.
  • When roughly doubled in size, knead again and make small buns.
  • let them roughly double in size and then bake at 450° F for 10 minutes till done

Okra Ladies Fingers

Okra known in many countries as ladies' fingers, bhindi, bamia, or gumbo is one of my favorite vegetables especially when stuffed with Recheado masala. Here's a simple Okra recipe which goes well with Daal, rice and fried fish.

Lady Fingers  Okra
Ingredients:-
  • Indian okra, 550 gr.;
  • 1 onion;
  • 3 tablespoons chopped tomatoes;
  • 1/2 teaspoon turmeric;
  • 1/3 tsp chili powder;
  • 1/2 teaspoon of salt.

Preparation:-
  • Chop okra and onions.
  • Fry onions in oil. Add okra, sliced ​​tomatoes and season with salt. 
  • Stir in spices and cook until okra softens, about 5 minutes.

Lauki Doodhi

Lauki also known as Doodhi or Dudhi, Ghiya or bottle gourd is a popular vegetable in India. It's supposed to have a lot of health benefits and aids digestion, is great for weight loss, and prevents heart disease. Most of all it's delicious!

Ingredients:-
  • 1 Doodhi;
  • 1 cm ginger, finely chopped;
  • curry leaves;
  • 1-2 tablespoons lentils Urad Dal;
  • Fenugreek seeds;
  • 1/3 teaspoon salt;
  • 1/3 tsp turmeric;
  • 3 tablespoons chopped tomatoes with juice.


Preparation:-
  • Fry in oil the fenugreek, urad dal, ginger, chili and curry leaves.
  • Add in chopped doodhi and salt.
  • Sprinkle turmeric, add the tomatoes and simmer for around 10 minutes.

Portobello Mushrooms

Portobello mushrooms make awesome appetizers if you can balance out the taste with some tasty toppings.

Ingredients:-
  • Pancetta
  • Portobello mushrooms
  • Spring onions
  • Cheddar cheese
  • Cherry tomatoes
Preparation:-
  • Stir fry Pancetta with chopped spring onions and diced cherry tomatoes
  • Spread over the Portobello mushrooms and bake for 20 mins on 400F

Sabudana Vada

Sabudana Vada also called 'sago vada', is a Maharashtrian traditional dish. This is usually served with spicy green chutney and hot tea. I tried grape-seed oil today which is supposed to be a healthier alternative.
Sabudana Vada

Ingredients:-
  • Sabudana 200 gm;
  • Two large potatoes;
  • Two Tbsp peanut butter;
  • Two green chilli;
  • One Tbsp lemon juice;
  • Half cup of chopped coriander;
  • One Tbsp corn starch;
  • Salt to taste.

Preparation:-
  • Soak  Sabudana for 3 hours and then drain.
  • Boil potatoes, mash ad season with salt, chopped coriander, sliced chilli, peanut butter and lemon juice.
  • Wet hand, shape mix into balls and flatten on corn starch to form thick discs.
  • Shallow fry till brown.

Arbi Curry

Arbi / Eddo  is best cooked fried with chat masala. None the less it can be used in curries as I found out today. Here's a nice Arbi curry recipe.

Ingredients:-
  • Five Arbis;
  • One large carrot;
  • 200 gms French beans;
  • One green chilli;
  • Half inch ginger chopped fine;
  • Quarter teaspoon Methi Fenugreek seeds;
  • Half teaspoon Jeera Cumin;
  • One teaspoon chopped ginger;
  • Handful of Curry Patta Curry leaves;
  • One small can of diced tomatoes;
  • Three tablespoons of Yoghurt;
  • Salt to taste.
Seasoning
  • Tablespoon of Coriander powder Dhania 
  • Quarter teaspoon of Cumin powder Jeera

Preparation:-
  • Peal and slice the Arbi into rounds
  • Cut carrot into juliennes and slice the French beans into bite size length.
  • Boil the Arbi in salted water for 5 minutes.
  • Add in the French beans, carrots and continue cooking till all vegetables are tender.
  • In another pan, heat oil and add fry methi seeds till brown.
  • Add cumin, ginger, green chilli, curry leaves and fry till the spices release flavour.
  • Add in the tomatoes and boiled vegetables.
  • Add yoghurt and stir to blend in the mixture.
  • Turn off heat and add a tablespoon of Dhania and quarter teaspoon of Jeera.
  • Cool slightly before serving.

Chocolate Cookies

No one can resist Chocolate cookies! My mom made some of the best cookies when we were growing up and I decided to revisit those times by setting out to make one of those delicious chocolate treats! Here's the recipe for around 30 chocolate oatmeal cookies/biscuits. you might need to add a little more sugar to your taste.

Ingredients:-

  • 4/5 cup butter, 200 ml;
  • 3 1/2 cup of flour, 700 ml;
  • 1/2 cup of cocoa, 100 ml;
  • 4 eggs;
  • 1 teaspoon salt;
  • 1 cup of sugar, 200 ml;
  • 1/2 teaspoon baking powder;
  • 1 teaspoon vanilla;
  • oatmeal for decoration.

Procedure:-

  • Cut butter into cubes and melt in the microwave.
  • In a bowl, mix flour, cocoa, salt, sugar and baking powder. 
  • Break the eggs and set aside 1 egg white to coat the biscuits later.
  • Add vanilla, eggs and butter into the bowl and knead into dough. 
  • From the dough form about 30 balls. 
  • Flatten each ball and dip one side in egg white and then into the oatmeal.
  • Preheat oven to 180 ° C (350 ° F). 
  • Bake for 25 minutes.

Hummus with Roasted Bell Peppers

Here's an excellent recipe for Hummus with a hint of roasted bell peppers and a strong garlic flavor.

Ingredients:-
  • 1 large tin of chickpeas, 796 ml;
  • 5 cloves of garlic;
  • juice of 2 lemons;
  • 2 tablespoons olive oil, 25 ml;
  • 5 tablespoons Tahini, 50 ml;
  • 1/3 teaspoon crushed cumin;
  • 1/5 teaspoon salt;
  • 1/3 teaspoon black pepper;
  • 1/3 teaspoon red pepper;
  • 2 slices of roasted red peppers;
  • water, 150 ml.
Procedure:-
  • Drain chickpeas. Blend all ingredients except roasted peppers until smooth
  • Garnish with finely chopped roasted red pepper and parsley.
  • Serve with pita / naan crisps.
