It's been a joy and truly a labor of love piecing our raised bed garden together. We learnt a lot from our last/first attempt at gardening and this time we were better planned.

The Best Pizza Dough

We got a bit tired of our whole wheat pizza dough I think we got too accustomed to it and decided it needed some tweaking.

US Road trips

We've made a few road trips around the US. There's a lot to see here and a lot of distance to cover. Here are some of our trips on the east coast.


Panama's carnival celebration in Panama City are supposed to be the second largest in the world. Enjoyed this big party with fantastic street food, dozens of stages and loud music blaring at every corner.


Canada has some of the most beautiful sceneries and landscapes. I hope to drive across to the West coast some day but till then here's a glimpse of Toronto and beyond.

Nothing quite prepares you for the sheer size and grandeur of this amazing city. The four days we spent in Manhattan gave us a chance to cover the main attractions and also showed us how much more New York City has to offer.

Delhi Chicken Nihari

Nihari is a delicious and hot mixture of spices from northern India. It's quite spicy and can be tamed a bit by optionally adding yogurt if necessary.
Delhi Chicken Nihari
  • 9 pieces of boneless chicken thighs;
  • 1 tablespoon garlic ginger paste;
  • 3 tablespoons plain yogurt;
  • 4 tablespoons Delhi Nihari curry powder;
  • 1 onion;
  • 1/3 cup chopped tomatoes;
  • 1 tablespoon of tomato puree;
  • coriander leaves for garnish.

  • Cut the chicken thighs into smaller pieces and leave to marinate with ginger garlic, yogurt and the Nihari spice for at least an hour.
  • Fry a chopped onion in oil till translucent, add in the chicken and then stir in tomatoes and cook for about 15 minutes. 
  • Sprinkle with cilantro and serve with garlic naan.

Whole Wheat Naan

I wasn't too keen on anything with whole wheat. I somehow always related it to dark brown bread which is way too heavy. This changed when we started to experiment with some whole wheat combinations. It's been almost a complete transition to only whole wheat now. Here's our version of whole wheat naans. They are healthier and much tastier than the white flour versions.
Whole wheat Naan

Ingredients (15 pieces):-
  • 1 1/2 cup of water;
  • 2 tablespoons dry yeast;
  • 4 teaspoons sugar;
  • 5 1/2 cup whole wheat flour;
  • 2 teaspoons sea salt;
  • 6 tablespoons plain yogurt;
  • 4 tablespoons olive oil;
  • 4 tablespoons butter 4 cloves of garlic to apply on naans.

  • Warm water in the microwave for about 35 seconds. 
  • Add yeast and sugar and let it stand for about 10 minutes until the yeast begins to foam.
  • Mix in a bowl the flour, salt, yogurt and oil.
  • Add the dissolved yeast to this mixture and kneed for 5 minutes.
  • Place the dough in a bowl at least twice if not thrice the size of the dough. Line with a bit of oil to prevent the dough from sticking. Leave for 2 hours to rise.
  • Divide the dough roughly into 15 pieces. Roll out each piece into the shape of a triangle.
  • Preheat a baking stone to 260 ° C (500 ° F). We used a narrow oven so that the naan cooks evenly from both sides.
  • Carefully open the oven once hot and place three (however many fit) naans on the stone. You might be able to slip the naans right in without removing the stone each time. 
  • Cook for 3 minutes, turn the naans and cook for another 3 minutes .
  • After removing the naan from the oven, brush with garlic, butter and salt.

The Best Pizza Dough

We got a bit tired of our whole wheat pizza dough  I think we got too accustomed to it and decided it needed some tweaking. This dough is a blend of whole wheat and and all purpose flour with a little more oil. We have also started using a pizza stone in the oven which gives you that perfectly crisp pizza crust.

Ingredients:- (dough for 2 pizzas): 
  • 2 cups lukewarm water; 
  • 2 tablespoons honey; 
  • 2 tablespoons dry yeast;
  • 3 cups whole wheat flour; 
  • 2 1/2 cup all purpose flour; 
  • 2 teaspoon salt; 
  • 6 tablespoons olive oil. 
  • Heat the water in the microwave at 40° C/110° F for about 35 seconds.
  • Add honey and dried yeast and let it stand for about 10 minutes until yeast begins to foam. 
  • In a bowl, mix the flour with the salt and oil. 
  • Add the dissolved yeast to the bowl and knead the dough for at least 5 minutes.
  • Oil a separate bowl, transfer the dough and keep covered  for at least an hour.  Then knead again 
  • Shape into rounds of  thickness about 1 cm. 
  • Prepare pizza toppings (e.g, parmesan, mozzarella, cheddar, salami, olives, peppers, onion rings tomato puree and mixed herbs.
  • To get best results, use a pizza stone. Preheat the stone to 500° F
  • Place the pizza on the heated stone and bake at 500° F till done.
